The purpose of this project, in which researchers from CIDIMA have participated, too, was to establish a fast, effective, and unequivocal methodology of analysis using Nuclear Magnetic Resonance (NMR), to analyze and identify the different types of Sherry Wines protected by the PDO Jerez-Xérès-Sherry.
After months of research, the technological goal met was double. Firstly, a new methodology was created to analyze and identify different types of Sherry Wines using NMR. Secondly, the results of the project arise as an objective tool, as well as an indicator of any assay used to avoid adulterations, allow objective certification of prolonged aging, and improve the organoleptic properties of Sherry Wines all around the world.
These awards are organized by the Wine Technology Platform (PTV by its Spanish initials), and their objective is to acknowledge the most distinguished R&D initiatives. To determine the verdict, the PTV brings together a panel of experts made up by representatives of the Ministry of Science and Innovation, the Ministry of Agriculture, Food, and Environment, the Centre for the Development of Industrial Technology, the PTV, AgroBank, and the Spanish Wine Interprofessional Organization (OIVE by its Spanish initials).
