The Digital Fingerprint of Sherry Wines using Nuclear Magnetic Resonance (2019-2021)

Project co-funded by the Centre for the Development of Industrial Technology (CDTI) and Bodegas González Byass Jerez S.L.U.

The project aimed to establish a methodology based on Nuclear Magnetic Resonance, for identification and certification for wines of prolonged aging (V.O.S. [ Vinum Optimum Signatum], V.O.R.S. [ Vinum Optimum Rare Signatum or Very Old Rare Sherry], Sherries with indication of age, and vintage Sherries), as well as wines from the PDO “Jerez-Xérès-Sherry” produced by Bodegas González Byass in different vineyard states.

It is noteworthy that this project was awarded with the “Premios PTV Innovación 22”, from the Wine Technology Platform.
